Microwave energy has been used in this
country to cook and reheat food since earOy
e[periments with radar in :orOd :ar ,,.
Microwaves are present in the
atmosphere aOO the time, both naturaOOy
and from manmade sources. Manmade
sources incOude radar, radio, teOevision,
teOecommunication Oinks and mobiOe
phones.
,n a microwave oven, eOectricity is converted
into microwaves by the MAGNETRON.
How Microwaves cook food
The microwaves cause the water moOecuOes
to vibrate which causes FRICTION, i.e.
HEAT. This heat then cooks the food.
Microwaves are aOso attracted to fat and
sugar particOes, and foods high in these wiOO
cook more TuickOy. Microwaves can onOy
penetrate to a depth of 5 cm 1ô ²
inches and as heat spreads through the
food by conduction, Must as in a traditionaO
oven, the food cooks from the outside
inwards.
Important notes
The dish used to cook or reheat the food
wiOO get warm during cooking, as the
heat conducts from the food. Even in
microwaving, oven gOoves are reTuired

The microwaves bounce off the metaO waOOs

containers to be absorbed by the water
moOecuOes in the food, aOO foods contain
water to a more or Oesser e[tent.
Foods Not Suitable for Cooking by
Microwave Only
Yorkshire Puddings and 6oufÁes. This is
because these foods reOy on dry e[ternaO
heat to cook correctOy, do not attempt to
cook by micro wave.
Foods that reTuire deep fat frying cannot be
cooked either.
Standing Time
:hen a microwave oven is switched off,
the food wiOO continue to cook by conduction
