Vegetables and Vegetarian
ingredients

1 aubergine, diced
5 ml (1 tsp) salt
1 courgette, diced
1 onion, diced
1 green pepper, trimmed and
diced
1 clove of garlic, peeled and
crushed
400g (14 oz) can of
tomatoes
30 ml (2 tbsp) olive oil
salt and pepper to taste

Ratatouille
,n a coOander sprinkOe aubergine sOices with saOt and Oeave for 0 mins
to remove bitter Muices. Rinse with coOd water. &ombine aOO ingredients
in a casseroOe. &over, pOace on gOass turntabOe and cook on +,G+
power for 15 mins or untiO vegetabOes are soft. Stir haOfway through
cooking time.

sliced very thinly
pinch nutmeg
pepper and salt
150 ml (¼ pt) double cream
25g (1 oz) butter
Dish: 20 cm (8”) shallow dish

Rub haOves of garOic around inside of dish and discard. Layer the potato
sOices in the dish, seasoning with saOt and pepper and nutmeg between
each Oayer. Pour the cream evenOy over the top of the potatoes and dot
with butter. POace on gOass turntabOe, cook on ME',UM power for 151
mins.

and cook on +,G+ power for mins. Add vegetabOes and stock,
recover and cook on +,G+ power for 10 mins or untiO vegetabOes are
soft. Season to taste. &over base of dish with a thin Oayer of tomato
sauce, then a Oayer of Oasagne on top foOOowed by a Oayer of vegetabOe
mi[ture. ThinOy sOice 175g  oz of the cheese and Oayer on top of
vegetabOes. &ontinue Oayering untiO ingredients are aOO used ending with
a tomato sauce Oayer. Grate remaining cheese and arrange over top in
diagonaO bands. &ook on +,G+ power for 0 mins or untiO piping hot.
